
At Allanhill, we eat a lot of soft fruit, especially strawberries. People often ask if we ever tire of it and the simple answer is no!
Strawberry Whizz
Still the favourite strawberry pudding in our house is Strawberry Whizz, a type of smoothie, which you can drink or slurp with a spoon!
Ingredients:
Fresh strawberries, hulled and halved
Vanilla ice cream
Just throw roughly two thirds strawberries to one third ice cream in a blender or food processor and blitz for a few seconds. Simple, but really delicious.
Strawberry and White Chocolate Muffins
Makes 12 standard size muffins
Ingredients:
150 ml milk
1tbsp white wine vinegar
310g plain flour
2 tsp baking powder
½ tsp salt
150g unsalted butter
130g caster sugar
3 eggs, lightly beaten
75g white chocolate chips, or crushed up white chocolate (you can add more or less to taste)
100g chopped fresh strawberries
Oaty Topping
30g light soft brown sugar
1 tbsp plain flour
25g unsalted butter
30g Porridge oats
Preheat over to 180˚C/gas 4. Mix milk and vinegar in a cup, and allow to stand for 10 minutes.
Make Oaty topping: combine the sugar and flour, cut in the butter using a knife until the mixture holds together , add the oats and set aside.
Sift the flour, baking powder and salt into a large bowl. In a separate bowl, cream the butter with the sugar until pale and fluffy. Add the eggs gradually and beat until smooth. Gradually fold in the sifted dry ingredients alternately with the milk and vinegar mixture. Mix until just combined. Gently fold in the blueberries. Quickly divide the mixture between the muffin cases and sprinkle the tops with the oaty mixture. Bake for around 30 minutes, or until well risen and golden on top. Allow to cool a little before serving.
This recipe is easily adapted to make raspberry and dark chocolate muffins, or blueberry muffins, banana and honey - in fact we often add crunchie, maltesers etc. You can be creative. Add a pinch of nutmeg and cinnamon if you like, however I always feel with summer fruits, the spices are a little strong.
